These are the ones I know of:

Counter
Stun
Evade
Batarang
Batgrapple
Throw
Takedown
Ground Takedown

I've gotten the variations up to all eight of these in a single combo, but I still don't have the 360 achievement for doing all the moves in one combo. What move(s) am I missing here?

You forgot strike.

I figured it would go without saying that I was striking, seeing as how you have to do that to build up a combo move.

Unless you mean the critical strike? Does that count as a variation?
