HERESY, I'll get to your question in a bit as that's a pretty in depth question and there's a lot of questions piling up. Rest assured I'm not going to ignore that one.
For your first question I'll have to ask one of the other guys who played, as I didn't get caught inside the manor. I don't believe there was an alarm, but there were numerous booby traps like pressure plate triggered dart traps inside.

When I finally nabbed the Heart of the Lion, Garrett picked it up and examined it while saying "So, the Baron does have a heart after all..." with that sarcastic wit he's always had. There was also a great quote when i encountered some guard sin a dining hall area:
Rest assured, Garrett's personality is still very much the same.

I went over a lot of the land while I was there and if you’re careful and observant you can get through the areas quietly and safe. Rush through and you’re in for a world of hurt.
A full action approach would be REALLY tough to do. I imagine someone out there could, but as a prospect it's discouraged simply because it would be really tough. Heck, I had a hard time ghosting through that garden/courtyard section in the beginning because of how many guards and how wide open it was, and I would still say that going an action route through there would be even tougher than that.

For now, it would appear the animation has to complete.
