is there a way to uncap the max health you can get? I don't really care if it goes off-screen, as long as it works, I'll be happy.

I think that it is possible, - just use disassembler on kain.exe to determine and apply some fixes, or do some changes in the memory of the game.
I have some another fixes in my version of the trainer to BO1 for the near aim.
