Setting up a Microsoft Sidewinder Joystick

I read the tread on how to set up a Microsoft Sidewinder joystick, but I’m still not sure I understand how to do this. Once I get into the game and then the controls I have several joystick types to choose from, none of which are the Mircosoft Sidwinder. Do I just pick any one to use? And then how do I adjust the controls? I read about “binding” the controls at this tread:

but do I do this “binding” when I’m in the controls section, or when I’m in the games or how do I get the Microsoft Sidewinder to work?
