A Good Use For Moss Arrows. "TIP"

shoot a guard who is out of your way with a moss arrow and make him choke. <example if there 3 guards in 1 room and your in a dark corner>

when he stops choking he will come to investigate then you can BLACK JACK!!! him.

Why waste perfectly good moss arrows? If you want to make someone investigate, I just jump or something and try and make some noise near my direction.... Then manuever around him and "Wack!".... that guard is down for the count.

What else are all of those moss arrows good for?

They're for the noisy surfaces (i.e. marble or metal floors). Shoot them on the area you plan on running accross and they will silence your steps. In T3, you don't really need them much for that since all you need to do is walk while crouched and you wont make a sound. IIRC, in T2 you still make a little noise while walking crouched over metal or marble floors, so the moss arrow got more use then. The other use for moss arrows is for shooting the Pagan Cornerstones, if you want to up your status with them.
