I downloaded RivaTuner.
http://www.guru3d.com/rivatuner/

(video card tweak/overclock program)

With it I changed my core clock and memory clock both to 300.

(They were at 325 & 310).

Thief 3 = Stable as a rock.

wooooooohoo!

Seems like your gfx card is overheating when playing Thief3 and perhaps others? When you underclock your GFX card it will run slower then usually but also cooler, thus stopping overheading problems.

When your playing another game be sure to turn back the clock speed on your gfx card so it's back to its default speed and if possible, try adding better cooling to your pc case. In some cases its enough to just move the pc to a more open space if its been hiding in a cramp space.

It wasn't overheating.

I don't know why exactly it was crashing, but clocking it down sure did the trick.

Still playing, still stable. I played for 5 hours straight last night.
