I know theres Prague and Paris, but how many actual levels? 20? 40?

The official count is 7 levels, and they're supposed to be "slightly smaller and more manageable" than those found in Chronicles.

I read somewhere that this game is not based on levels, its kind of like one big single level that it's the whole game

The only thing I can think of is MGS 2's system of streaming the whole game together by using the ability of a console to scan ahead so there's no need to load a new level. Even that has parts that are easily to differentiate.
AOD will have parts that can be differentiated from each other, most notacibly like the part where you play as Kurtis, or when Lara changes outfits, or when you switch locales from Paris to Prague.
