If you play with Egypt, you need many settlements. Build lots and lots of troops cause you'll lose many of them.
The backbone of your army will be soldiers (swordmen), supported with many archers.
Double click on the location where you want your soldiers to go to: they don't have a special attack so don't save their stamina.
If you have honour points, create camel riders and chariots first, build expensive missile warriors when you have enough powerful melee cavalry to support you schock infantry.
A few ballistas are always welcome: they kill any unit in their path so use it on approaching, powerful soldiers like praetorians, berserkers or german cavalry.

Yesterday, I was playing skirmish against a hard opponent. I played Egypt, he Rome. I captured 2 towns that were rather easy to defend and I started building a large army of soldiers and bowmen. Then, I captured a town close to his base. I builded a few ballistas and guard towers. Soon he started to attack me. I defended until I created 6 squads of chariots and 2 squads of camel archers. When I had this great army, the game was over after 5 minutes. I defeated half of his army with my foot troops and destroyed the rest of his army with my cavalry. Then I attacked every village with my cavalry.
